I’m a pastry chef, teacher, and independent researcher. I taught in Ecuador, studied at Ferrandi Paris, and worked at Ore Ducasse at the palace of Versailles.
The Research
For a year I have researched the pastry of the 17th and 18th centuries in the royal court at Versailles. I want to revive, thanks to this research in the archives, the taste of the past, and bring it into the present.

The Workshop
A two-and-a-half hour experience in the heart of Versailles, beginning in October 2026, that dives into tea-times as they would have been in the age of of Marie Antoinette.
The Book
A book of ten sweet recipes from the royal court of Versailles in the 17th and 18th centuries.
